The peaches were just too beautiful to resist so we picked a few. Too early! Thanks to a recipe in Melissa Clark’s Cook This Now, we discovered a beautiful, delicious salad that makes great use of not-quite-ripe peaches.

Make a dressing with:
1 tsp. fresh lime juice (I used lemon)
1/4 tsp. salt
1/8 tsp freshly ground black pepper
4 tsp. olive oil
Pour over a bowl of 3 to 4 thinly sliced small unripe peaches.
Sprinkle with 2 to 3 Tbsp. of thinly sliced fresh basil and enjoy!
